Coconut creamed corn

The other day i made a delicious creamed corn type dish with coconut milk. I like making creamed corn when corn is in season as i find it tastes best with corn freshly cut from the cob.

My creamed corn recipe is this- Heat the cut corn (with as much "milk" that you can get from the cob*) in a saucepan, add a little cream or milk and a bit of cornmeal to thicken then simmer for a few minutes and serve right away.

The coconut milk recipe was a little different. I heated a can of cocnut milk in a saucepan until boiling, then added about 1/2c cornmeal, cooked a few minutes until it was thick and then added fresh corn and cooked a few minutes more. Because of the proportions it was more like a cornmeal mush with corn kernels throughout but you could of course use less coconut milk and cornmeal and more fresh corn.

I really like coconut and the flavor was delicious paired with the corn. It was tasty both sweet (with some maple syrup on top for breakfast) and savory (with a bit of grated cheese on top- i used Urgelia which i like for it's strong flavor).

Morning music

I Love Herptiles

On Sunday July 11th, Alec and i are going to attend the New York Metro Reptile Expo!! I am so excited!! I have always wanted to go to Repticon, or any reptile expo for that matter, and the day will soon be here when all of my dreams can come true! Haha. But really. I can't wait. I'm counting down the days. I've been researching all sorts of reptiles like arboreal snakes, boa & python morphs, geckos, monitors & tegus of all kinds, tortoises, pretty much everything and anything in anticipation of getting to see these things first hand. I know it will be hard to resist impulse buying, but i tell myself that i can't get anything new until after we move. Which, by the way, is coming up soon. Our lease is up August 1st and we don't want to stay.

Today is June 1st. I can't believe i haven't posted since May 10th! In the last couple of weeks i've hosted 1 barbeque, gone to a karaoke party and a potluck. I've been eating fruit like mad.

Old and fat

I just now read the Pioneer Woman's (Ree Drummond's) recipe for Cinnamon Baked French Toast. Which, i assure you, was not my first time encountering a delicious baked french toast casserole (or in simpler terms, a bread pudding) but oh, how she preys upon my stomach and it's most inglorious, sugary, carb-laden, buttery, sinful desires. Oh yes. Sinful, sinful desires!

And so, not for the first time but certainly the most recently, i thought to myself how much i look forward to being middle-aged, with children and without the sense of obligation to myself to keep my body healthy and figure as trim as my willpower allows, and thus the day when i shall let myself loose in the kitchen, free my wildest most craven desires and eat ANYTHING I WANT. Anything at all, and EVERYTHING!!!


I assure you there will come a day, perhaps only several decades away, when the adjectives "porky" or "portly" will no longer suffice to describe my bulk. When instead, it will be the era of "blubbery".

Ha ha! Who daydreams of one day being fat?
Apparently i do and it makes my mouth water.

Curse you, McDonalds!

I found a very promising recipe for English muffins and eagerly called Alec over.

"I found a great recipe for English muffins!"
"English muffins?"
"Yeah! You don't know what an English muffin is?"
He gives me a blank look.

"You've NEVER had an English muffin?" I exclaim incredulously, "You know, like Thomas' English muffins? 'It's all about the nooks and crannies'?"
"I don't know," he replies dubiously, "I don't really like muffins."
"Not a muffin muffin, it's an English muffin. Here, look."
I show him the recipe's picture of the final product.

"Oh!" he says, brightening, "You mean a McMuffin!"
"A what? It's an English muffin."
"Yeah, a McMuffin. I've had McMuffins before."

Curse you, McDonald's, for destroying our generations food knowledge! Ours and all generations to come! CURSE YOU!!

Where are you from?

I'm going to admit that i find it a little bit offensive when a person asks me "Where are you from?" or "What is your ethnicity?" or, even worse, "What are you?" (i'm an alien, you dumb bastard). Basically, anything along those lines. It's irrational, i know, because you can't really blame someone for being curious. But still. Also, it bugs me more when men ask me, rather than women, and bugs me slightly less when the person asking is also of an Asian origin.

Of course, even i am guilty of being curious enough to ask that of someone. But whenever i do i feel offended at myself. Even if the other person doesn't seem offended. But maybe, secretly, they are? Because i don't betray my inner irritation, my inner hatred of those few simple words. I don't snarl a response, nor swear at them. Just seethe inside until the anger builds and i blog about it.
